Roasted Carrots with Chamoy Sauce

Hailing from Mexico, Chamoy has enough flavor to turn even a humble carrot into something spectacular.  Inspired by one of our favorite Chefs, Yottom Ottelengi's recipe is made with dried apricot, sumac, and Gochugaru (Korean chili flake).  Salty, sour and spicy!
